Goji Berry, Lime and Apple Smoothie for Breakfast

Here’s a simple recipe for a vitamin and antioxidant packed smoothie. The ingredients make it particularly good for your eyes, it’s full of anti-cancer compounds and makes a delicious breakfast that keeps you satisfied for far longer than sugary cereals.

When I moved home recently, I was without many of my usual smoothie ingredients. I did a small shop that included some organic pink lady apples and limes and I always have superfood goji berries on hand.

Mixing these three with a couple of extra ingredients ahead, I was surprised just how good the resulting smoothie taste. The texture too, filled with all the ground up beneficial fiber, was almost like a rich desert mousse, only healthy.

So without further ado, here’s my new goji berry, lime and apple smoothie recipe.

Organic Goji Berries

Goji berries are small red berries native to Asia that have been used medicinally for thousands of years. In recent times they been shown to be full of nutrients and have some amazing health properties.

For a short summary, gojis are incredibly high in free radical quenching antioxidants like zeaxanthin for better eyesight, beta-carotene, beta-cryptoxanthin, lycopene, ellagic acid and vitamin C.

A good intake of antioxidants in your diet has been strongly associated with a lower risk of heart disease and cancer and many other health conditions. Antioxidants also protect your skin cells from damage and may help reduce the visible signs of aging.

Eating goji berries has been shown to lead to lower LDL cholesterol, better digestive health, improved immunity, reduced stress levels and better sleep. This is one powerful little berry.

Organic Apples

I like red delicious for the small and pink lady apples for the big ones. Pink ladies have recently been revealed as the healthiest apples due to their exceptionally high flavonoid content.

It’s important to get your apples organic where possible as they are often sprayed. At very least, soak them in hot water with a good splash of Apple Cider Vinegar and scrub them well before using them.

Desiccated Coconut

Desiccated coconut brings healthy fiber to the smoothie and is especially good for improving the intestinal environment. It also makes the blend thicker and helps to give it more the texture of a creamy mousse.

The Juice of a Fresh Lime

Limes contain rare antioxidants known as flavonol glycosides with powerful anticancer and antibiotic properties. They are also well known as a great source of vitamin C and add a brilliant finishing tang to the taste of this smoothie.

I’ve never tolerated pasteurized milk well personally and soy milk is questionable so I usually use almond or hazelnut milk. But recently, coconut-based milk alternatives have become available and I think they are even better if you can get them.

Coconut Oil

Far from making you fat, the beneficial medium chain fatty acids in coconut oil like capric and lauric acid have been shown to improve weight loss and reduce belly fat by stimulating your metabolism.

Coconut oil is also a very healthy oil to cook with and far superior to the inflammatory processed vegetable oils that most people use in the kitchen.

How to Make an Apple, Lime and Goji Berry Smoothie

If you don’t have a blender already or are thinking of upgrading to something powerful that really blends up well, I have this Breville Hemisphere Control Blender in my kitchen and love it. Cheap blenders usually have a short shelf life and replacing them can end up costing more over time than getting a really good one that works well from the start.

To begin, toss a handful of goji berries into your blender and add enough water to let them soak in it. This softens them up and is good to do before eating them or adding them to a muesli or other recipe as well.

Add your desiccated coconut and coconut oil and then chop up your apples small enough for your blender blades to puree up and throw them in. If you have a good blender this may only need to be into quarters. Low powered blenders probably need them well chopped.

Finally, juice the lime, removing any seeds and try and drizzle it over the apple in the blender jug to help with oxidization.

Pour in enough milk to reach two thirds of the way as high as you smoothie ingredients and then blend everything up on high until the consistency looks good to you.

Drink this goji, lime and apple smoothie immediately. You can also freeze any reminder for a frozen dessert in the evening.
